Brunch, the best meal

Nothing like waking up and knowing what you want for brunch!

This morning, I made a lovely frittata!  Here’s the recipe:

Spinach, Turkey and Pepper Frittata

  • 2 large handfuls of fresh spinach
  • 1/2 chopped red bell pepper
  • 1 ounce of turkey, deli style
  • 1 large egg
  • 1/2 cup egg whites
  • dash coconut milk (use regular, if you like)

Chop pepper and cook on medium-high heat in a skillet.   When they start to brown (I’m not a big fan of squishy pepper, so I keep mine rather hard, though brown), add the spinach.  The spinach should wilt down in about 2-3 minutes.   Beat the egg, egg whites and milk in a bowl and season as you like (I prefer pepper, salt and cayenne pepper).  Pour bowl mixture into the skillet and turn the heat to low.  Place the chopped pieces of turkey into the mixture, and cover for roughly 5-10 minutes, or until the top of the egg mixture seems relatively hard (not soupy).  Place in the oven and broil for 2 minutes, or until the top is crispy brown.

This recipe has huge amounts of protein for very few calories.  I actually eat this entire recipe by myself if I’m very hungry, or you can split it between two and also add a nice side.

I also froze a banana for about an hour, mashed it up (banana ice cream style!) and ate it with a spoon of peanut butter.
